CAULIFLOWER ORIENTAL STYLE                                           

1 cauliflower cut into florets, 6 mushrooms sliced, 8 water chestnuts sliced, 2 tblspns cornflour, 2 tblspns soy sauce, 2 tblspns sherry, 2 tblspns chicken stock, 1 tblspn spring onions

Lightly simmer the cauliflower in 2 cms water in a covered saucepan; add the mushrooms after a few minutes adding more water if needed, add water chestnuts.  In a separate saucepan make a paste with the cornflour, soy, sherry and stock stirring until sauce thickens. When thick, remove from heat.  Transfer drained cauliflower and vegetables to platter and pour sauce over vegetables.  Sprinkle with spring onions.  Serve immediately.
