Friday freebie

MULBERRY SOUP

4 cups mulberries, 4 apples peeled, cored and sliced, 4 cups apple juice, 3 tblspns castor sugar, ¼ tspn ground cinnamon, 1 tblspn cornflour, 3 tblspns water                                                                                    

Pick over mulberries discard stems and bruised mulberries. Place mulberries and apples in saucepan. Pour in apple juice. Simmer 20 minutes. Mash. Strain through sieve. Add castor sugar and cinnamon. Mix cornflour in water. Add to soup. Bring to boil. Remove and serve hot or chilled. If chilled, top with whipped cream.
